These carrots (and veggies) are perfect to compliment a salmon dinner with (or if you are vegan, add to a stir-fry or serve with quinoa and vegan sausages).
1 tbsp. olive oil
1/4 tsp. salt
1/4 tsp. ground black pepper
1 bunch organic carrots
1 tbsp. balsamic vinegar
1) Preheat oven to 425 degrees F. Line a 9×13 inch baking pan with aluminum foil.
2) Mix olive oil, salt, pepper, and carrots and put in pan.
3) Bake in the preheated oven until tender (around 30 mins.).
4) Sprinkle balsamic vinegar over the carrots. Put back in oven and bake for another 5-10 mins.
5) Serve hot.
