Popsicles Made with Be Fresh Red and Blue Matcha
Vibrant Red Matcha Popsicles
Prep Time: 10 – 15 minutes
Cook Time: 3 – 4 hours
- 2/3 cup Organic Cane Sugar
- 2 1/2 tablespoons Be Fresh Red Matcha Powder
- 1 cup lemon juice, approximately 7 to 8 lemons
- 1 1/2 cups water
Method
- Prepare the hibiscus syrup by combining the sugar, water, and Red Matcha Powder in a small pot.
- Heat until the sugar melts completely and it starts to boil. Then remove it from the heat, cover, and let stand for 10-15 minutes.
- Combine the syrup with lemon juice, and water in a cup, giving it a quick stir.
- Pour the lemonade into your popsicle molds. Place the lid over the mold and insert your popsicle sticks as straight at possible.
- Freeze for 4-6 hours, or until frozen solid. For best results, freeze overnight.
- Optional – You can sprinkle some chocolate flakes once your popsicles are ready.
Healthy Vegan Blue Matcha Popsicles
Prep Time: 10 – 15 minutes
Cook Time: 3 – 4 hours
- 1 cup Organic Coconut Milk Powder
- 2 teaspoons Be Fresh Blue Matcha Powder
- 1 cup unsweetened plant-based milk
- 1 ripe avocado (peeled, pitted and chopped)
- 1/4 cup maple syrup
- 2 teaspoons of vanilla extract (store bought or homemade)
Method
- Combine all the ingredients in a blender and puree until smooth. You may have to scrap down the sides or tap the bottom of the blender to get out any air bubbles. If the mixture is too thick you can slowly add 1-2 tbs of plant-based milk.
- To prepare a homemade Vanilla Bean extract, slice each bean once long-ways and place in an empty bottle. Pour one cup of vodka, rum or alcohol of your choice. Make sure the vanilla beans are completely submerged, now all you have to do is shake it occasionally and wait. It generally takes a few weeks before its ready to use.
- Pour the mixture into your popsicle molds to freeze. Insert the ice-pop sticks. Freeze until pops are solid and totally frozen (4-6 hours or preferably overnight).
