5 Tips For Proper Potato Storage

Potatoes last longer than most other fruits and vegetables, but eventually, they start to sprout green shoots and lose some of their freshness and flavour. If you store them properly, they will stay fresh for weeks, maybe months!

Here are 5 tips for proper potato storage:

  1. Do not wash your potatoes until you are ready to use them. Leaving the dirt on protects against light damage, which causes potatoes to go soft and green.

  2. Inspect your potatoes for soft spots, sprouts, mold, shovel damage. Eat the imperfect ones first and store the more perfect ones.

  3. Place the potatoes in a cardboard box, paper bag, mesh bag, or basket. Something with adequate ventilation!

  4. Store your potatoes in a cool, humid and dark place. Like an unheated basement if you have one, or an insulated garage. Never store potatoes in the fridge, too-cold temps turn the potato starch into sugar.

  5. Check on them regularly. Remove any soft, shrivelled, or sprouted potatoes, so they don’t cause more to go bad.

Bonus tip: Store potatoes separately from onions and fruits. These give off ethylene gas that can cause your potatoes to sprout.
