Gluten Free Breakfast Parfait

Gluten free breakfast can be a bit of a challenge, I admit it. But there are options out there and this one is a great one as it is super easy to make and only requires a few very basic ingredients that you probably already have in your pantry.

 

Ingredients:

  • ½ cup mixed berries (or fruit of choice)
  • 2 Tbsp. chia seeds
  • 4 Tbsp filtered water
  • 1 Tbsp. maple syrup
  • Pinch of sea salt
  • ½ cup plain unsweetened yogurt
  • ½ tsp. vanilla extract
  • Unsweetened coconut flakes

 

How to:

Add choice of berries or fruit to a mason jar along with chia seeds, maple syrup, water and sea salt. Let the chia seeds absorb the liquid for about 10 minutes. Stir occasionally to avoid clumping.

Add the vanilla extract to yogurt and pour over the mixture.

Coconut can be added as a topping or mixed in with yogurt.

Refrigerate overnight or eat right away if you can’t resist temptation.
