Catherine Roscoe Barr, BSc Neuroscience, is the founder of The Life Delicious, a global wellness coaching practice with international luxury retreats and private clients worldwide via Skype. Catherine is a certified personal trainer, fitness instructor, and coach practitioner, and writes about fitness, food and travel for numerous publications including Montecristo, Canadian Living, WestJet Magazine, BC Business and BC Living. Before settling on the West Coast she lived in Sydney, Toronto, Oregon, Montana, and practically everywhere in Alberta. Describe your Lifestyle. (ex. Dietary, family needs, fitness / routine support etc.)

I think most people would say I have a very structured lifestyle, but it gives me the energy and enthusiasm to really be PRESENT in my life. Daily, I practice AM/PM rituals that include hydrating, meditating, journaling, exercising and a big healthy breakfast with my husband in the morning; and winding down with dimmed lights, no screens, calm conversations, journaling and reading at night. Weekly, I take Mondays as me-days, Tuesdays to Thursdays as work days, Fridays as social days, and weekends as family days. I plan my weekly menu every Sunday before I place my SPUD order and then wash, chop and prep everything for the week ahead when I receive my order on Monday mornings.

 

What does SPUD mean to you – what do you love about SPUD?

I love so many things about SPUD! I love the quality of products and that the bulk of what I buy is local and organic. I love voting for small businesses doing great things with my money. I also love that you can see the distance each item has travelled so you can reduce your carbon footprint by choosing something produced closer to home. I love the variety of products available at SPUD – I buy everything from my produce, canned goods and eggs to my laundry detergent, skincare products and toothpaste at SPUD.

Ahh, don’t make me choose just 3! The Harvest Box. Everything from GRAIN, Cowichan Pasta Company and Anita’s Organics. Belmondo Skincare’s “The Dew” nourishing face oil, and Green Beaver’s Frosty Mint toothpaste, Frosty Mint Sunflower Castile Liquid Soap and Make-up Remover.

 

What is your favourite indulgence?

Two things: Avocados (they’re not local but I can’t imagine life without avocados) and Chocolate (Denman Island Chocolate’s Organic Gingerama, Zimt Artisan Chocolates’ Organic Salt of the Earth, and Fraser Valley Gourmet’s Milk Chocolate Almond Butter Crunch are favourites).

 

Define Community. What is your desire for ours?

My definition of community is a supportive web of people connected by values, beliefs, hopes and dreams. It makes me feel so good to purchase nourishing food produced by people that I know and love, and, in turn, nourish those I love.

 

What do you stand for?

 

I stand for love and joy and goodness.
