This recipe for Red Beet Vegan Ice Cream is completely dairy-free, made smooth and creamy with coconut milk. The ice cream is naturally sweet, and you can even add chocolate chips to give it more of a red velvet feel.

Red Beet Vegan Ice Cream

A delicious, easy plant-based ice cream made with beet powder and coconut milk.

  • 2 tbsp Red Beet Powder
  • 1/2 cup Organic Coconut Milk Powder
  • 1 cup Hot water
  • 3 Bananas
  • 1/2 tbsp Vanilla extract
  • 2 tbsp Maple syrup (Optional)
  1. Reconstitute coconut milk powder into cream by mixing with hot water.

  2. Blend bananas and coconut cream in a food processor until smooth. Add in beet powder and vanilla extract. Include maple syrup for additional sweetness.

  3. Pour mixture into a freezer-safe container and freeze for 3-6 hours. Serve and enjoy!
