Turkey Pita Pizza by Catherine Barr

You’ve slaved over the stove and now it’s time for some quick and easy leftover management. Enter the pita pizza! Our amazing ambassador, Catherine Barr, always has a bag of whole wheat pita in her freezer because they make the perfect lazy pizza crust. These ingredients are just suggestions for toppings, get creative with what  you’ve got!

Ingredients:
1 c. shredded turkey
4 whole wheat  pita
1 c. pizza sauce
1 c. zucchini, thinly sliced
1/4 red onion, thinly sliced
2 tbsp. sundried tomatoes, chopped
1 c. mozzarella cheese

Directions:
1) Spread 1/4 c. of pizza sauce on each pita and top with 1/4 of the vegetables, turkey and cheese.
2) Bake for 4 minutes at 425F, then broil for 1 more minute
