It might seem daunting at first, but there are lots of ways to make a vegan breakfast!
I think you will find that most vegans have either a powerful blender, a food processor or both. If you are thinking about transitioning to more plant-based diet, it can be great investment. We have a food processor, which I put to use every morning at breakfast (and also when making a dessert).
When we were vegetarians, we still ate eggs for breakfast and many traditional breakfast meals made with eggs such as omelets, French toast and pancakes. Since embracing a vegan lifestyle, eggs are no longer part of our diet any more than fruit and traditional yogurt are but as vegans, our breakfasts are varied, healthy and filling. Often we have granola (sweetened with maple syrup as opposed to honey) with either a coconut yogurt or cashew milk and some sliced fruit. We still eat pancakes and instead of using eggs in them, there are several other alternatives (to be discussed in a later post) but pancakes take more time to prepare than we usually have in the morning.
My favourite fast and healthy breakfast meal is a smoothie; nutritious, filling and easy to make. Luckily at SPUD, I can buy 10 LBS of overripe organic bananas for only $7.50. When my order arrives, I peel, slice and freeze them in individual packages to use as I please. I often make banana bread, muffins and “ice cream” with them but lately I make a peanut butter and banana smoothie for breakfast…. And here is how it’s done:
1 frozen sliced banana
1.5 cups of cashew milk
1 cup of ice cubes
1 serving of Hemp protein (SPUD carries several types)
1 serving of greens powder (also available from SPUD)
2 tablespoons peanut butter
Blend all ingredients until smooth. Enjoy!
